Berbere ist eine äthiopische Gewürzmischung aus Chili, Bockshornklee, Koriander, Kardamom und weiteren Gewürzen. Sie ist aromatisch-scharf mit erdigen Noten und passt klassisch zu Lamm, Rind, Eintöpfen, Hülsenfrüchten und vegetarischen Gerichten.

Afrikanische Chiligewürze wie somalisches Chilipulver X-HOT gehören zu den schärfsten Gewürzen. Die Dosierung sollte vorsichtig erfolgen – schon geringe Mengen bringen intensive Schärfe in Eintöpfe, Currys, Marinaden und Grillgerichte.

Beide sind scharfe Chili-Gewürze aus Afrika. Piri Piri ist eine portugiesisch-afrikanische Kreuzung mit fruchtigem Aroma, Pili Pili kommt direkt aus Westafrika und ist kräftig-scharf. Beide eignen sich für Marinaden und Grillgerichte.

The Spice Culture of Africa – Diverse from North to South

African cuisine is as diverse as the continent itself. North African spice blends often feature cumin, coriander, cinnamon, and paprika. West African spices bring intense heat through chilies

Ethiopian Spice Tradition – Complex Blends as a Basis

Ethiopian cuisine uses elaborate spice compositions. Berbere is the best-known blend:
Chili, fenugreek, coriander, cardamom, ginger, cloves, and other spices are roasted and ground.
The result is aromatically spicy with earthy, warm notes.
Berbere forms the basis for Doro Wat (chicken stew), Kitfo, and numerous lentil stews. The heat can
be controlled by the quantity – from mild to intense. Anyone who wants to cook Ethiopian cuisine needs
a good Berbere blend as a base.

West African Heat – Chili in Many Varieties

West Africa is known for hot spices. Piri Piri brings fruity heat, while Pili Pili tastes powerfully spicy. Both come from the family of African chilies and are suitable for marinades, grilled dishes, and stews. Jollof Rice is a West African classic – the eponymous spice combines tomatoes, onions, paprika, and spices into a blend that can be directly incorporated into rice dishes. Also suitable for stews, sauces, and grilled meat. Nigerian spice blends like Tsire combine roasted peanuts with ginger and chili – perfect as a dry rub for grilled dishes or as seasoning for vegetables.
