Ingredients – Meat
2 cloves of garlic, crushed
2 tablespoons (Mexican) beer
1 tbsp oil
1 tbsp Fajita spice mix
500g rump steak (in one piece)
Preparation – Meat
1. Mix garlic, beer, oil and fajita seasoning mix to make a marinade.
2. Add the meat to the marinade, massage it in well, cover, and marinate in the refrigerator for 5–6 hours, ideally overnight.
3. Grill the meat whole to keep it juicier. Alternatively, cut it into strips before marinating and grill it as a stir-fry.
Ingredients – Salsa de Aguacate
3 tomatillos
2 cups of water
2 large avocados, washed, peeled and cut into pieces
¼ Habanero chili peppers
3 cloves of garlic, roughly chopped
1 small onion, roughly chopped
Preparation – Salsa de Aguacate
1. Clean the tomatillos, boil them in water for 10-12 minutes until soft, and drain.
2. Blend with avocados, habaneros, garlic and onion.
3. Add a little water as needed until the salsa is creamy.
Ingredients – Salsa Fresca with Turtle Beans
400g cooked turtle beans (or other beans)
200g corn (frozen or canned)
1 large tomato
1 avocado
1 onion
Juice of one lime
1 tbsp red wine vinegar
1 small bunch of fresh coriander
1 tbsp salsa seasoning mix
Salt to taste
Preparation – Salsa Fresca
1. Drain the beans and corn.
2. Dice the tomato, avocado and onion, and mix with the remaining ingredients.
3. Cover and let it steep in the refrigerator, ideally overnight.
Ingredients – Sour Cream
100 ml crème fraîche
50 ml sour cream
Juice and zest of one lemon
Salt
pepper
Preparation – Sour Cream
Mix all ingredients together and season with salt and pepper.
Other ingredients
16 corn tortillas
Grated cheese (optional)
Chopped coriander
Preparation – Total
1. Preheat the grill to 280 °C and sear the meat on both sides until roasted aromas develop.
2. Reduce heat to 120 °C and let the meat cook over indirect heat until it reaches a core temperature of 58 °C.
3. Remove the meat from the grill and let it rest for 10 minutes.
4. Wrap tortillas in aluminum foil and heat for 5 minutes at 120 °C.
5. Cut the meat into thin strips, fill tortillas with salsa fresca, place the meat on top and top with sour cream and salsa de aguacate.
6. Serve with chopped coriander and optionally cheese.
Tip
For even more roasted flavor, strips of meat can be briefly seared in a grill pan.
The story
Fajitas originated in northern Mexico and were prepared by cattle herders who grilled leftover pieces of meat over an open flame. Today, they are a classic of Tex-Mex cuisine – flavorful, versatile, and perfect for sharing.
