" LEMONY DELIGHT FOR SUNNY DAYS "
Ingredients (for 4-6 people)
6 chicken breast fillets
salt and pepper
1-2 tbsp Lemon Chicken Mix from Spice Shop
4 lemons
1 clove of garlic
125 ml olive oil
1 kg floury potatoes
500 g shallots
Fresh basil or fresh parsley
preparation
1. Season the chicken
Rub the chicken breast fillets thoroughly with salt, pepper, and the Lemon Chicken Mix. Place them on a baking sheet lightly greased with oil.
2. Mix the marinade
Squeeze the lemons and mix the juice (approx. 125 ml) in a bowl with salt and pepper. Press the garlic through a garlic press and add it along with the olive oil.
3. Prepare the potatoes and shallots
Peel the potatoes (halve or quarter larger pieces) and toss them in the lemon-oil marinade. Peel the shallots as well and halve them if necessary.
4. Line the baking tray
Distribute the potatoes and shallots between the chicken fillets. Pour the remaining lemon-oil marinade evenly over the top.
5. Baking
Place the baking tray in the cold oven. Set the oven to 200°C and bake the dish for approximately 1 hour on the middle rack.
6. Finish
Before serving, finely chop the basil or parsley and sprinkle it fresh over the top.
Tip
The longer the potatoes marinate in the lemon-oil marinade, the more intense the flavor becomes.
