LAMB SKEWERS WITH YOGURT-MINT DIP.

Ingredients

600 g lamb sirloin or boneless leg of lamb

2–3 tsp Shish Kebab Spice Blend

3 tbsp olive oil

1 tbsp lemon juice

1 small onion

1 clove garlic

For the dip:

200 g yogurt

1 small clove garlic

1 tsp lemon juice

1 tbsp chopped mint

Preparation

1. Prepare the meat

600 g lamb sirloin or boneless leg of lamb

Trim the lamb of excess fat and cut into approximately 3 cm cubes. Place in a bowl and season lightly with salt and black pepper.

2. Mix the marinade

2–3 tsp Shish Kebab Spice Blend

3 tbsp olive oil

1 tbsp lemon juice

1 small onion

1 clove garlic

Finely chop or quickly blend the onion and garlic. Mix with olive oil, lemon juice, and Shish Kebab Spice Blend. Pour the marinade over the meat and mix everything well.

3. Marinate the meat

Cover the meat and let it marinate for at least 30 minutes. 2 hours in the refrigerator is better to allow the Shish Kebab Spice Blend to fully penetrate the meat.

4. Thread the skewers

Wooden or metal skewers

If using wooden skewers, soak them in water for about 1 hour beforehand. Thread the marinated meat onto the skewers, leaving a little space between the pieces so they cook evenly.

5. Grill

Grill the lamb skewers over high heat, turning them every few minutes. After about 7 minutes, they will still be slightly pink inside; after 9 minutes, they will be more well-done.

6. Prepare the yogurt-mint dip

200 g yogurt

1 small clove garlic

1 tsp lemon juice

1 tbsp chopped mint

Salt

Mix the yogurt with garlic, lemon juice, mint, and salt. Let it sit briefly and serve with the hot skewers.

Serving suggestion

Serve with flatbread, rice, grilled vegetables, tomato salad, or a simple cucumber salad. The yogurt-mint dip balances the roasted flavors from the grill well and rounds out the lamb skewers perfectly.

Tip

If you don't want to use lamb, you can also prepare this recipe with chicken or beef. Chicken should be cooked through completely.
