Origin and production
“ KING OF UMAMI ”.
This Japanese specialty combines the best of traditional fermentation with modern seasoning. Inspired by ume-so – a fermented plum vinegar made from ume fruit – roasted sesame seeds are infused with shiso, plum puree, fish sauce, and other umami-rich ingredients. The multi-stage production process creates a deeply aromatic blend that perfectly balances salty, fruity, and fermented notes.
Taste and aroma
An intense interplay of salty, sour, and umami flavors with nutty roasted aromas and a fruity plum note. The toasted sesame seeds provide richness and depth, while ume and shiso add fresh, slightly acidic accents. Fish sauce and fermentation notes create a robust umami base that elevates every dish – complex, well-rounded, and unmistakably Japanese.
Application
Ideal as a topping for rice dishes, sushi bowls, vegetables, fish, or tofu. Also excellent for refining salads, marinades, and sauces. A small amount is enough to give dishes an exceptionally intense umami profile with a balanced fruitiness.
