Taste and aroma
Warm, slightly sweetish and resinous notes of allspice and juniper combine with the characteristic spice of caraway and black pepper. Marjoram adds a mild, harmonious herbal note. The result is a balanced, full-bodied aroma that gives sauerkraut depth and authenticity.
Application
One to two teaspoons of the blend per kilogram of sauerkraut are enough to bring out the full flavor. The spices develop their best aroma when braised slowly with the sauerkraut – whether classic with bacon and onions, vegetarian or in a stew. Also perfect for pickling homemade sauerkraut.
