Origin and production
“ EXOTIC SHARPNESS OF JAVA ”.
Indonesian long pepper (Piper retrofractum) originates primarily from the islands of Java and Bali and is considered a more intense alternative to common black pepper in its homeland. With its elongated, rather than round, peppercorns and a more complex aroma, it brings a spicy exoticism to the plate that has been appreciated in Southeast Asia for centuries. In some regions, it is even considered more refined than conventional pepper.
Taste and aroma
Sharp, warm, slightly sweet, spicy, exotic, persistent, subtly woody, deep, complex, piquant.
Application
Grind or crush the long pepper just before use to release its full aroma. It's perfect in curries, stews, and marinades, but also gives soups and sauces a uniquely intense peppery note. With its added sweetness and slightly woody undertone, it's especially interesting where regular black pepper no longer adds any new dimension.
Interesting facts
Long pepper is one of the oldest known types of pepper and was highly prized in the Mediterranean region even in ancient times. Today, it is experiencing a renaissance in gourmet cuisine, as its sweet, woody spiciness enriches both classic and modern dishes. Besides its distinctive flavor, it is traditionally valued in many cultures because it provides not only spice but also a pleasant feeling after a meal.
