Briefly toast the seeds in a pan without fat to activate the essential oils. This gives them a particularly intense aroma. Ideal for curries, stews, marinades and sauces. Cumin goes wonderfully with lamb, beef, poultry and vegetarian dishes such as lentils, chickpeas or rice. Also indispensable in blends such as garam masala, baharat or chili con carne.
