Asafoetida, also known as devil's dung, comes from the resin of the giant fennel plant (an umbellifer). It is traditionally used in India and in Ayurvedic cuisine and is valued for its intense aroma.
Taste and aroma
Strong, sulfurous and spicy, with an onion and garlic-like aroma that becomes milder when cooked and develops a deep umami note.
Application
Essential in Indian vegetarian dishes, especially those with lentils, legumes, and grains, as it improves their digestibility. Suitable for curries, chutneys, and vegetable dishes. Due to its intense aroma, it should be used sparingly.
