ESPELETTE PEPPER

This fine chili comes from the French Basque Country, more precisely from the area around Espelette in the Pyrenees. Only here may it be grown under strictly protected rules of origin (AOC). The sun-ripened pods are traditionally dried and ground, which gives them their bright red color and their characteristically mild, smoky flavor.

Gentle, well-rounded and aromatic with a mild heat. The flavor is reminiscent of sweetish paprika, combined with a delicate smoky note and a warm, Mediterranean character. Ideal for giving dishes depth without over-seasoning them.

Perfect for refining meat, fish, vegetables and sauces. Especially delicious with lamb, pork or seafood. Simply sprinkle over finished dishes or stir in while cooking for subtle warmth and color.

Piment d’Espelette has a protected designation of origin (AOP). In the Basque Country, the pods hang in long strings on the walls of houses to dry in the fall. There it is used in the kitchen as naturally as pepper is elsewhere.
