This special spice blend contains a variety of ingredients, including ancho, mulatto, and cascabel chilies, cumin, cloves, oregano, pepper, Ceylon cinnamon, and cocoa powder. The molé flavor is complex and deep, with a beautiful balance of spiciness, sweetness, and a subtle chocolate note that embodies Mexican cuisine.
TASTE AND AROMA
Molé has a rich, spicy flavor with a slight sweetness and a subtle chocolate note, enhanced by the Ceylon cinnamon and cocoa powder. The blend of chilies and spices brings both depth and heat to dishes. The taste is complex, and the flavors fully develop when combined with other ingredients.
APPLICATION
Molé is excellent in enchiladas, roasted or grilled chicken, and as a sauce for rice or potatoes. In Mexican cuisine, molé is often served on special occasions such as Christmas and Easter. Traditionally, it is prepared with "romeritos," a rosemary-like vegetable cooked with potatoes, dried crab cakes, and molé. To prepare, simply roast 100g of pumpkin seeds and a mixed nut mixture and sauté with apple, tomatillos, onion, and garlic. Then blend with 1 teaspoon of the spice blend and simmer.
