Origin and Production

"GRAPEFRUIT, LIME AND GENTLE HEAT."

Cumeo pepper originates from the Himalayan region of Nepal and is one of the special pepper varieties with a distinct citrus note. Botanically, it is not a classic black pepper, but it is used similarly in the kitchen. The dark berries are dried and, when ground, develop their special aroma of grapefruit, lime and pomelo.

Taste and Aroma

Cumeo pepper tastes citrusy, slightly tart and pleasantly spicy. Its scent clearly recalls grapefruit, lemon balm and lime. In taste, it is less heavy than classic black pepper and instead brings a bright, fruity heat with a slight tingling note.

Application

Ideal for fish, seafood, poultry, salads, vegetables, Asian dishes, curries, light sauces and desserts.

It is best to freshly grind Cumeo pepper or lightly crush it in a mortar and use it only towards the end of preparation. This way, the citrusy note is better preserved. It pairs particularly well with salmon, prawns, chicken, avocado, goat cheese, mango, strawberries, chocolate and creamy desserts.

Interesting facts

Cumeo pepper is often also called grapefruit pepper because its citrus note clearly resembles grapefruit. Compared to Timut pepper, Cumeo usually appears somewhat darker, rounder and less numbing on the tongue, while Timut often tingles more strongly and is more reminiscent of Szechuan pepper.

Since Cumeo pepper contains many essential oils, it should not be cooked for long periods. Heat can weaken the citrusy notes. For the best flavor, it is added to the dish shortly before serving.
