Application
Colombo is especially well-suited for preparing vegetable curries and potato dishes, but it also takes marinated grilled meat to a new level. To make a paste, fry onions, garlic, and ginger in a little oil, add 1 teaspoon of the spice mix per person, and cook for 2 minutes. Then you can add meat and stock, and use either rice or ground almonds to thicken the curry. Cook for about 1.5 hours, until the meat is nice and tender.
