Origin & Special Features

Red peppercorns also come from the Piper nigrum plant and are the fully ripe fruits, turning a bright red color before being harvested and dried. Unlike green and black peppercorns, which are often harvested before they are fully ripe, red peppercorns have the longest ripening period and offer a complex, sweet aroma. They are rare and are primarily grown in tropical regions such as Vietnam and Indonesia. Red peppercorns are especially popular with gourmet chefs, offering a more delicate texture and intense flavor than their green and black relatives.

Taste & Aroma

Red peppercorns are characterized by their fruity, sweet heat. Their flavor is less spicy than that of black peppercorns, but much more intense than green peppercorns. They have a subtle, fruity sweetness with a mild, warm heat, making them excellent for adding sweetness to savory dishes. They complement sauces, fish dishes, poultry, salads, and exotic desserts that require a sweet heat.

Green, white and red pepper – the difference

The differences between the different types of pepper lie in their degree of ripeness and processing:

  • Green peppercorn : Harvested unripe, it has a fresher, milder flavor. Often used pickled or fresh, it has a delicate texture. Green peppercorn adds freshness to sauces, salads, and marinades.

  • White pepper : Obtained from fully ripe black peppercorns. It differs from black pepper in that the outer husk is removed, giving it a milder, less pungent flavor. White pepper is especially popular in light sauces or Asian dishes where a subtle spiciness is desired.

  • Red peppercorn : The ripest form of peppercorn, which remains on the vine the longest. Red peppercorns offer a sweeter, fruitier flavor and are especially popular in fine dining. They are rare and expensive, but their unique flavor is unmistakable.

Application

Red peppercorns are ideal for sauces that require subtle sweetness and complexity. They're excellent with fish, poultry, and salads. They also perfectly complement sophisticated Asian dishes that require a special touch. They're particularly excellent in sauces like steak sauce or smoked fish. You can also use red peppercorns in pickled form, which brings out their unique flavor even more.

Health benefits

Red pepper, like other pepper varieties, has antioxidant properties and contains piperine, which aids digestion. Due to its ripeness, red pepper also contains higher levels of vitamins and minerals, including vitamin C and beta-carotene. These nutrients boost the immune system and contribute to overall health. Pepper is also known to support metabolism and can help improve nutrient absorption in the body.
