ORIGIN AND DESCRIPTION
Indonesian long pepper (Piper retrofractum) comes mainly from the islands of Java and Bali and is considered a more intense alternative to regular black pepper in its homeland. With its long, rather than round, grains and a noticeably more complex aroma, it brings a spicy exoticism to the plate that has long been appreciated in Southeast Asia. Anyone who has tried it in curries or braised dishes will quickly realize why in some regions it is even considered more noble than regular pepper.

APPLICATION
Grind or crush the long pepper shortly before use to develop its full aroma. It goes perfectly in curries, stews and marinades, but also gives soups and sauces an unmistakably intense peppery note.
