Origin and special features
“ALLSPICE – FOR JERK CHICKEN, STEWS AND BAKED GOODS”.
Allspice, also known as “pimento”, comes from the tropical regions of Central America and the Caribbean, especially Jamaica. The small green berries of the allspice tree are harvested unripe, dried and then ground into powder. This versatile spice combines the flavors of cinnamon, nutmeg and clove in a single fruit – hence its name “allspice”. Ground allspice is easy to measure and gives sweet and savory dishes alike depth and warmth.
Taste and aroma
Warm, sweetish-spicy and slightly peppery – a harmonious mix of cinnamon, nutmeg and clove. When heated, allspice develops an intense aroma that comes into its own especially in Caribbean and autumnal dishes.
Application
Essential for Caribbean classics such as jerk chicken. Just as perfect for stews, curries, braised dishes, baked goods and Christmas desserts. Simply stir it into doughs, sauces or marinades, or toast it along with the food when frying. Also ideal for homemade spice blends.
Good to know
Ground allspice is found in many gingerbread and speculoos spice blends and is an important part of Jamaican jerk seasoning. Use it sparingly – even a pinch on the tip of a knife clearly shapes the flavor.
